1 lb Bay Scallops-washed, then dry and cut into 1/4 inch thickness
1 med. Yellow Onion-peeled and minced
1 Tbsp Shallots or Chives-minced
1 clove Garlic peeled and crushed
3 Tbsp Butter
1/2 C unsifted Flour
1 1/2 tsp Salt
1/2 tsp Pepper
2 Tbsp Olive Oil
3/4 C White Wine ( not red)
2 Bay Leaves
1/8 tsp Thyme
1/3 C Gruyere or Parmesan Cheese- grated

Directions:
Directions:
Stir-fry onion, shallots and garlic in 2 Tbsp Butter for 5-8 min until golden
Dredge scallops lightly in a mixture of flour, salt and pepper
Heat olive oil (1 min) ,add scallops and stir-fry 2-3 min
Reduce heat to low and add onion mixture
Add wine, bay leaves and thyme, cover and simmer 2-3 min
Remove bay leaves
Spoon into buttered scallop shells (4) and set on a baking sheet
Top with grated cheese and top with remaining butter
Preheat broiler
Broil 5 inch from heat for 4-5 min.until bubbly and browned

This recipe can be prepared earlier and chilled until dinner time
Place on lowest shelf of oven to warm for 5-6 min. before broiling
