1 yellow onion, large, finely chopped
2 celery stalks, sliced
5 carrots, sliced
1 large potato, cut into chunks
fresh spinach (optional)
1/4 c. olive oil
16 oz. vegetable broth
1 lb. halibut, cubed 2x2

Directions:
Directions:
In a stew pot, heat olive oil over medium high heat, sauté all the vegetable for 10 minutes
Add the vegetable broth, cover, cook 30 minutes over medium high heat.
Add the cut up fish, turn off heat, let pot sit for 20 minutes before serving.
