10 Sweet Red Peppers
16 oz soft Goat Cheese
10 oz Cream Cheese-softened (not whipped)
Zest of 1 Orange
Juice of 1/2 Lemon
1 bunch Chives-chopped
Salt and Pepper

Directions:
Directions:
Blister and char the skin of the peppers
Submerge in ice water to stop the cooking
Remove the charred skin under cold running water. Pat dry
Cut the tops off the peppers and remove seeds. Keep peppers whole
Place in refrigerator on paper towels to absorb moisture
Blend cheeses orange zest, lemon juice and chives
Season with salt and pepper to taste
Fill peppers with cheese mixture with a piping bag or spoon
Refrigerate filled peppers until cheese is firm
Slice into 1/2 inch rounds with a very sharp knife
Chill until served
