3 eggs
2/3 c pumpkin
1 c sugar
1 tsp lemon juice
Sift together
3/4 c plain flour
1 tsp nutmeg - cinnamon - ginger
1 tsp sugar
1 tsp baking powder
1/2 tsp salt
Filling
8 oz cream cheese
1/2 stick butter
1 c powdered sugar
1 tsp vanilla
pecans (optional)

Directions:
Directions:
Beat eggs 5 minutes, adding in sugar, pumpkin and lemon juice. Add flour mixture in little at a time. Pour into greased & floured cookies sheet. Add in nuts if desired.
Bake 350º for 15 minutes.
Turn cake out of pan onto tea towel covered with powdered sugar. Roll cake up in tea towel while hot. Let it cool completely. Unroll carefully and spread with filling. Roll back up and keep chilled until ready to serve.
