8 slices rye bread with caraway seeds
1/4 c butter
1 c thousand island dressing
1/4 lb thinly sliced corned beef
1 c sauerkraut well drained
1/2 lb swiss cheese, shredded

Directions:
Directions:
Lay out the bread slices. Spread one side of each slice with butter and the other side with thousand island dressing. Lay the sliced corned beef on the dressing side, making sure there is no overhang.
Spread the sauerkraut evenly on the corned beef, then sprinkle the cheese evenly on top of that.Top with the remaining bread slice - buttered side out. Press sandwich down to make it compact.
Heat a large nonstick fry pan or griddle until hot.Place the sandwiches on the pan pressing 3 or 4 times to keep it compact. Cook 3-4 minutes until golden brown, then flip and brown other side making sure cheese is melted.
