1 1/2 large yellow onions, coarsely chopped
1/2 c. olive oil
3 lb. pork tenderloin (cut into 3"stew chunks)
1 1/2 c. white wine
10 stalks celery w/leaves, (cut into 3" pieces)
2 garlic cloves, minced
3/4 tsp. salt
1/4 tsp. pepper
2 c. vegetable broth

In a large heavy pot, heat olive oil over medium heat add onions, garlic and pork. Constantly stirring so meat browns evenly.
Once meat is browned add the wine, cook for 5 more minutes.
Remove meat from pot, add the broth to the pot, stirring well.

Add the celery to the boiling liquid, pressing down on the celery to immerse into the broth. Cook the celery for .5 hour or until tender.
Return the meat back into pot with celery, cook another .5 hour or until meat is tender.
