2 cups flour
1.5 cups sugar
1 cup cocoa
2 tsp baking soda
3/4 cup canola oil
2 cups boiling water
1/2 tsp instant expresso powder (1/4 cup strongly brewed coffee, reduce boiling water to 1 1/4 cup)
2 eggs, beaten
2 tsp vanilla

buttercream frosting:
2 sticks butter, room temp
2 tsp vanilla
4 cups powdered sugar
6 T milk

preheat 325º

grease 9x13 pan or two 8 inch pans; line with parchment paper

in mixing bowl, combine flour, sugar, cocoa and baking soda. added the canola oil.

combine boiling water and expresso powder, stir to dissolve, add to batter; gently combine without overmixing 25-50 stirs by hand

add eggs and vanilla and mix again to combine, batter will be thin

pour into pans bake 30-40 minutes for 9x13 or 22-25 for 8" pans

let cool 10 minutes before turning out, cool thoroughly before frosing

Frosting:

cream butter and vanilla on medium speed mixer, alternate adding powdered sugar and milk
