1/2 cup butter
1# sharp cheddar cheese, finely grated
2 cups flour
1 tsp salt
1/4-1/2 tsp cayenne pepper
1/4 tsp paprika
1 cup small chopped pecans

Directions:
Directions:
in large bowl, combine butter and cheese

in second bowl, sift together flour, salt and spices, then add to cheese mixture, mix well, using your hands

if mixture is too dry, microwave 15 seconds at a time to soften butter

add pecans and mix well

divide dough in thirds

roll into logs, wrap in waxed paper and refrigerate overnight

preheat 350º

spray cookie sheet with cooking spray; place wax paper on sheet, then turn over so both sides of paper greased

slice logs into about 6 dozen slices about 1/4 inch thick, place on sheets

cook 8-10 minutes until set and golden, remove to cooling rack
