2 c. Long Grain White Rice
1/2 c. Vegetable or Canola Oil
1 14 oz. Can of Chicken Broth
1 15 oz. Can of Tomato Sauce
1/2 c. Chopped Bell Peppers and Onions
Salt and Pepper to Taste

Directions:
In a saucepan with tight fitting lid, heat oil. Add rice and saute until lightly browned. Add peppers and onions and salt, continue saute for about a minute. Add tomatoe sauce, chicken broth and 3/4 can of water. When mixture comes to a boil, cover and turn heat to low. Let it cook on low for 25 minutes. DO NOT LIFT LID!
