1 lb ground lamb, ground chuck or a mix
1 small red onion
2 garlic cloves finely minced
1 tbsp red wine vinegar
1 egg, lightly beaten
1/3 c dry bread crumbs
2 tbsp Greek yogurt or sour cream
1 tsp dried oregano (rubbed)
1/2 tsp ground cumin
1/4 tsp ground cinnamon
1/4 tsp ground all spice
1/4 tsp ground cayenne pepper

Tzatziki - yogurt sauce
1 c Greek yogurt
1 glove garlic crushed to paste (use 1/2 tsp salt and knife blade to crush chopped garlic)
3 tbsp olive oil
1 tbsp red wine vinegar
5 fresh minced mint leaves
1/4 c fresh dill, minced
1/4 c grated cucumber, squeezed dry

Add sliced tomatoes and onions as desired

In a bowl, knead all of the kebab ingredients together and form 4-5 inch sausages of 4-5 inches in length. Cover and place in fridge for about an hour for flavors to mix.

Prepare the Tzatziki as follows: Whisk all ingredients together. Taste and adjust seasoning and put in fridge for about 30 minutes.

Cook sausages in a 400 degree oven or grill over charcoal or gas until brown and cooked through, about 12-14 minutes. Grill or warm pitas.
