Tortilla chips
1 pound ground beef or turkey
1 packet or 1/3 cup taco seasoning
1 can red enchilada sauce
1 can refried beans
8 oz finely shredded Mexican cheese
Picked jalapeno peppers, chopped
Any other favorite nacho toppings
Sour cream, salsa and or guacamole

On a large sheet pan with sides, cover with tortilla chips. It's ok if they overlap a bit. Brown ground beef; drain if needed. Add taco seasoning, enchilada sauce and refried beans. Stir to combine and reduce some of the liquid.
Spoon meat mixture over chips. Cover all with shredded cheese. Sprinkle with chopped peppers and any other desired topping. Bake at 450 for 6 minutes. Top with sour cream, salsa and or guacamole.
