3 ripe plantains
1 red onion
1 green pepper
2 cloves garlic
2 Tbsp. coconut oil
1 tsp. salt
1 Tbsp. garam masala
4 c. tomato juice
2 Tbsp. natural peanut butter
Cilantro (opt.)

Directions:
Directions:
Peel plantains and slice into thin rounds. Chop onion, pepper, and garlic. Saute plantains and chopped veggies with coconut oil in a covered pan until onions become translucent. Whisk tomato juice and peanut butter together to avoid lumps. Finally, add all ingredients to the pan and cook about five more minutes.
