1 lb. Yellow split lentils (chana dal)
water
2 c. diced carrots
1 c. diced zucchini
1 c. chopped cauliflower
1 c. chopped cabbage
1 bunch green onions, chopped
1 inch fresh ginger, grated
3 cloves garlic, chopped
1 1/2 tsp. salt
1 1/2 tsp. coriander
1 1/2 tsp. cilantro
1 1/2 tsp. turmeric
1 tsp. cumin
1/2 tsp. cardamom
1/2 tsp. fennel
1 tsp. ground lemongrass
1 Tbsp lemon juice

Directions:
Directions:
Cover lentils with water at least two inches above, and soak over night. Cook lentils just barely simmering for about an hour or until lentils easily mash with the back of a spoon. Add all ingredients. Add more water to cover ingredients. Cook until veggies are tender. You may blend cooked lentils in the blender before adding all the other ingredients for a smoother soup.
