2 PACKAGES OF MEXICAN PORK CHORIZO (CACIQUE)
3 or 4 LARGE RUSSET POTATOES, DICED
1/2 LARGE ONION, DICED
SALT AND PEPPER TO TASTE, HEAVY ON THE PEPPER
1 DOZEN EGGS
TORTILLAS (10 inch FLOUR FOR BURRITOS) WARMED
COOKING OIL

IN LARGE FRYING PAN HEAT OIL AND ADD POTATOES AND ONIONS. ADD SALT AND PEPPER TO TASTE. COVER AND FRY UNTIL SOFT, STIRRING OFTEN TO PREVENT BURNING. REMOVE LID AND ADD CHORIZO, CASING REMOVED. STIR TO BREAK UP CHORIZO AND COOK UNTIL DONE, ABOUT 10 MINUTES, STIRRING OFTEN. ADD EGGS ONE AT A TIME AND STIR TO MIX. COOK UNTIL THE EGGS ARE SET. REMOVE FROM HEAT AND ROLL INTO BURRITOS, OR SERVE WITH WARM TORTILLAS.
