2 c finely diced celery 3 T butter
1/2 c boiling water 3 T flour
1/2 t salt 1/2 t celery salt
1/2 c chopped onion sprinkle with white pepper
1/2 c cold milk or half and half

Directions:
Directions:
Cook celery in boiling water, to which 1/2t salt has been added. Cook until celery
is tender. Saute onion in butter and blend flour and seasonings with onion. Slowly add milk and cream. Cook until thick and smooth. Stir constantly. Add celery and liquid.
