1 C White Sugar
1/2 C Light Karo Syrup
1 C Roasted Peanuts
1 tsp Margarine
1 tsp Vanilla Extract
1 tsp Baking Soda

Directions:
Directions:
Combine sugar and syrup in a microwave proof dish.
Microwave on high for 2 minutes. Remove from microwave and stir until no lumps remain. Return to the microwave for 70 seconds.

Remove from microwave and stir in peanuts - microwave for 2 more minutes - remove - stir and return to microwave for 70 seconds.

Add butter & vanilla, return to microwave to cook for 90 seconds.

Remove and add baking soda; stir well.

Immediately pour onto a cookie sheet that has been lined with parchment paper - let sit until cool. Break apart and store in an airtight container.

1 lb of peanuts will make 3 batches of brittle.
I make this to give to friends and family every year at Christmas.
