For the chicken
1 3-4 lbs. Roasting Chicken
1/4 c. olive oil
Juice from 2 large lemons
4 large garlic cloves, crushed
2 fresh stems of rosemary (1 stem chopped)
1 level tbsp oregano
1 c. warm water
Salt and pepper to taste
7 potatoes cut into chunks

Directions:

Wash and pat dry chicken.
Rub inside and out with 1/2 lemon juice, olive oil, oregano, chopped rosemary.
Place chicken in a heavy roasting dish w/cover. Add the water, remaining lemon juice and rosemary sprig to the bottom of pot.
Cover and roast @ 350º for 1 1/2 hour or until done.
**After chicken is cooking for 45 minutes start to prepare potatoes.
In a large stew pot parboil the chunks of potatoes for 15 minutes. Remove the water and place potatoes in roaster with the chicken, cook 1/2 hour longer.
