Stuffed Jumbo Shells Recipe

1 box (12oz.) Jumbo Shells
1 lb. ground beef or Italian sausage
2 tbsp. olive oil
1 bag (6 oz) baby spinach
1 cup onion, finely chopped
1 clove garlic, minced
1 tsp. salt
1/4 tsp. pepper
1/8 tsp. ground nutmeg
1 egg
1/4 cups freshly grated Parmigiana cheese
1 cup shredded mozzarella cheese

Directions:

Preheat ove to 375º
Cook jumbo shells according to pkg. directions, drain, reserving 1/3 cup of the pasta water.
Cook ground beef/sausage in a large skillet over medium-high heat mins. or until no longer pink, stirring occasionally. Remove from heat.
Add oil, spinach, onion, garlic, reserved pasta water, continue cooking 10 mins., stirring occasionally. Remove from heat.
Add seasonings, and blend well. Let mixture cool.
Stir in egg and Parmigiana cheese.
Pour 1 cup of your favorite pasta sauce into 13x9 baking dish.
Fill Jumbo shells with meat mixture; place in dish. Pour remaining sauce over shells; sprinkle mozzarella cheese over the top, cover with foil.
Bake for 30 mins. or until thoroughly heated.
