3 c sugar or substitute
1/2 c vegetable oil or sugar free applesauce
1/2 c melted butter
4 eggs
3 1/2 c flour
2 tsp. baking soda
1/2 tsp. salt (or not)
1/4 tsp. vanilla
2 tsp. cinnamon
1 tsp. nutmeg
2/3 c water
2 c cooked, mashed sweet potato ( 2 medium)
1 c chopped walnuts or pecans (optional)
3/4 c raisins (optional)

Directions:
Directions:
Preheat oven to 350º. In the bowl of electric mixer, combine eggs, oil or applesauce, and melted butter. Beat 45 seconds. Add eggs one at a time. Beat well after each addition. Whisk together the dry ingredients and add to the egg mixture, alternately with water. Stir in the mashed sweet potatoes, vanilla and chopped nuts and raisins, if using.
Transfer batter into 3 buttered and floured loaf pans.
Bake at 350º for 60-70 minutes or until done when tested with toothpick.
Loaves may be wrapped tightly when cool and frozen for up to 2 months.
