2 9 inch pans of cornbread (made from packaged mix)
6 slices white bread
2 c. chopped celery
3 c. chopped onion
1/2 pound butter or margarine
2-3 cups chicken broth
2 eggs
2 hard boiled eggs

Directions:
Directions:
In iron skillet sauté onion and celery until yellow and limp. Crumble corn bread into onion mixture. Tear white bread into fine pieces and add broth until mixture is moist but loosely packed. (takes about 1 1/2 to 2 cups broth). Add chopped hard cooked eggs and slightly beaten eggs. Season with salt and pepper.
Pack into buttered dishes and cover with foil. Bake about 45 minutes @ º325
Note: More broth may be added if dressing becomes too dry.

This is the best dressing ever!
Mom was a firm believer in using iron cookware. She believed the use of iron gave recipes a distinct flavor and cooked more evenly. Her instructions usually included the use of iron skillets or dutch ovens.
