1 T coconut oil
2 gloves garlic, minced
1/2 cup onions, chopped
1 large bundle asparagus, trimmed and cut into 1 inch pieces
1/2 cup peas
1 cup zucchini, chopped
1/2 T ginger, minced
2 cups quinoa, cooked
1 1/2 T soy sauce
2 eggs

Directions:
Directions:
Heat coconut oil in large saute pan.
Add garlic and onion and cook for 2-3 min.
Add asparagus, peas, zucchini, and ginger. Cook another 5-7 mins.
Add the quinoa and soy sauce and cook for 2 minutes.
Make a well in center and scramble the eggs.
Toss everything together and serve!
