For the Quinoa:
1/3 cup quinoa
juice of 1/2 lemon
salt
handful of hazelnuts (1.5oz)
1/2 small cucumber
Big handful of arugula

For the Dressing:
2 T almond butter
2 T olive oil
juice of 1/2 lemon
1/2 t chili flakes

Directions:
Directions:
Preheat oven to 425F

Place quinoa in saucepan with generous 1 cup of boiling water, the lemon juice, and a little salt. Let boil for 1 minute or so, then reduce heat, place lid on pan and let simmer for another 10-15 minutes, until all the water has been absorbed and the quinoa is fluffy but not mushy.
Meanwhile put the hazelnuts on a baking sheet and let them bake for about 10 minutes until crunchy. (watch so they don't burn)
Slice cucumber lengthwise into quarters, then into eighths. Discard the seedy center and thens slice into thin pieces.
Mix the dressing ingredients in a mug, adding 2 T water and a little salt.
Once the quinoa has cooked place in a bowl with the hazelnuts, cucumber, and arugula, then pour the dressing on top and mix it all together.
