1 lb chopped, pitted peaches (frozen works)
5 cloves garlic
1/2 onion, chopped
Sugar / maple syrup to taste
2 tsp. salt
zest and juice of 1 lime
1 cup water
1 cup apple cider vinegar
3-5 habanero peppers, stems removed and cut in half (wear gloves)

Directions:
Directions:
Combine everything but the sugar, apple cider vinegar, and habaneros in a medium sized pot and bring to a boil. Reduce heat and simmer for 5 minutes.

Remove from heat, add peppers. Blend (immersion blender / stand up blender) until smooth. Stir in apple cider vinegar. Taste. Add sugar, salt, or lime juice to suit your taste. Let cool and bottle as desired. Should last several months in the fridge.

It is HIGHLY recommended you use latex gloves when handling peppers.
