Korean Bibimbap Recipe

Meat and meat sauce/marinade:
1 lb ground beef (You can use steak, chicken or shrimp as well)
1 Tbsp soy sauce
1 Tbsp sesame oil
1 tsp sugar – I used brown sugar
1/4 tsp minced garlic

Vegetables and Rice:

1 cup bean sprouts – (You don’t have to use them up if you think it’s too much but I love having lots of vegetables on my Bibimbap!)
1/2 cup sliced shiitake mushrooms
1 cup carrots (Cut like toothpicks)
1 cup zucchini (Cut like toothpicks)
1 cup onions, thinly sliced
1/2 cup sugar snap peas
Salt & Pepper to taste
3 to 4 serving portions of steamed rice
3 or 4 eggs (depending on the serving portion)
1 tbsp. olive oil

Bibimbap sauce – The below sauce might be only enough for 3 servings if you like eating it spicy.
2 tbsp. gochujang (Korean Hot & Sweet Sauce)
1 tbsp.sesame oil
1 tbsp. sugar – I used raw sugar
1 tbsp.water
1 tbsp.roasted sesame seeds
1 tsp. vinegar – I used apple vinegar
1 tsp. minced garlic

For meat:
1. Mix all the marinade ingredients in a dish to marinate the meat in Add meat. Marinate the meat for at least 30 mins.
2. If using shrimp or ground beef, add some cooking oil into a wok or large pan and cook the meat on medium high to high heat. It takes about 3 to 5 mins to thoroughly cook it. If using chicken or steak, prepare your favorite way (Grill or broil).
3. The steak or chicken will need to be sliced paper thin prior to assembling, but wait to do this until all other ingredients are ready.

For the Sauce:
1. Combine all ingredients and set aside.

For the veggies:
1. Add some cooking oil and 1/4 tsp of fine sea salt in a pan or wok and cook the onions on medium high to high heat until tender. You may add the sugar snap peas, carrots and zucchini to the pan and cook an additional 2 to 3 minutes, if you desire.
2. Clean/rinse the shiitake mushrooms and thinly slice them. Add some cooking oil and 1/4 tsp of fine sea salt in a wok and cook the mushrooms on medium high to high heat until they are all cooked. (It takes 2 to 3 mins.)
3. Make fried eggs. (While sunny side up is common, you can make them per your preference.)

To assemble:
Put the rice into a bowl and add the meat, assorted vegetables, Bibimbap sauce and the egg on top of the rice. Serve it warm.

A Korean friend and his wife made this for us when we were at YWAM visiting Robert. It was so good and not really spicy at all. You can control the heat with the amount of hot/sweet sauce you add. We have had it with ground beef and the thinly sliced steak. Both were wonderful. Hope you like it!
