Pizza Dough

1 tablespoon of Dry Yeast or 1 packet
2 pounds of Flour
1/2 tablespoon of Salt
2-2 1/2 cups of water at 110º

Topping

1 28oz can of Crushed Tomatoes
1 16oz can of Crushed Tomatoes
1 medium Onion Chopped
2 teaspoon of Salt
2 tablespoons of Oil (Veg or Olive)
1 1/2 teaspoon of Basil (Dry)
1 1/2 teaspoon of Oregano (dry)
2 cups of Mozzarella or Provolone
Pepperoni (If Desired)
Olives (If Desired)

2 Large Cookie Sheets

Pizza Dough

Mix Yeast and 1 cup of water - dissolve yeast and let set. Oil cookie sheets or use spray. After yeast is ready mix into flour and salt and knead until smooth - Approx. 15 minutes.
Pre-head overn at 325º. Split dough in thirds and either flatten and stretch in cookie sheet or roll out with rolling pin and then place on sheet. Place cookie sheets in over for 30 to 35 minutes.

Topping

Sautee onion in oil, Add seasonings and tomatoes. Cook slowly about 30 minutes. Put cheese on crust and then add tomatoe sauce, pepperoni and olives. Bake for 15 minutes at 325º. Switch sheets in oven and bake for another 20 to 25 minutes
