LARGE CAN (106 OZ) TOMATO PUREE
1/2 LARGE BROWN ONION, DICED
5 OR 6 GARLIC CLOVES, MINCED OR CRUSHED
1 1/2 TBSP EACH KOSHER SALT, WHITE SUGAR, FENNEL SEED AND ITALIAN HERB SEASONING
1/2 TBSP DRIED OREGANO
12 TBSP BLACK PEPPER
1 LB HOT ITALIAN SAUSAGE LINKS, BROWNED
1/2 TO 1 CUP RED WINE

BROWN THE SAUSAGE ON ALL SIDES IN FRY PAN. ADD THE REMAINING INGREDIENTS TO CROCKPOT, STIRRING TO MIX. ADD SAUSAGE. COVER AND COOK ON LOW, 6-8 HOURS.

SERVE OVER PASTA OF CHOICE AND GARLIC BREAD, OR AS A SAUSAGE SUB.

I OFTEN ADD BROWNED GROUND BEEF DURING THE LAST 1 HOUR OF COOKING, OR INCREASE THE SAUSAGE TO 2 LBS. THIS SAUCE IS GREAT FOR FREEZING.
