1 1/2 C. Chicken Broth
3 Boneless, Skinless Chicken Breasts
1 Med. Onion, chopped
3 Cloves Garlic, minced
1 tsp. Black Pepper
1 T. Mild Chili Powder
1 tsp. Cumin
1 tsp Oregano
1 lg Yellow Bell Pepper, julienned
1 lg Red Bell Pepper, julienned
1 lb. Can White Hominy
1 Bunch Cilantro, chopped
1/2 tsp Chipotle paste

Directions:
Directions:
Bring broth to boil and add chicken breasts. Simmer 20 min.
or until chicken is done. Remove chicken, and let cool, then
coarsely chop.

Add the following to broth: onion, garlic, black pepper, chili
powder, cumin, and oregano.

Bring to boil, lower heat and cook
for 20 minutes, add the bell peppers.

Cook additional 10 min. Add hominy, including liquid to soup pot.

Bring to boil. Add chopped chicken, cilantro, and chipotle paste. Stir, and season
to taste.

If desired, serve with salsa, chopped radishes, or sliced
cabbage.
