1 box Mochiko flour
1 - 3 oz. box Instant lemon pudding
1 block butter
1 cup angel flake sweetened shredded coconut
3 cups milk (1 can coconut milk and dairy milk to make 3 cups)
2 1/4 cup sugar (can use less)
4 tsp. baking powder
5 eggs lightly beaten
2 tsp. lemon extract

Directions:
Directions:
Heat oven to 350 degrees. Grease a 9x13 pan. In a large bowl, stir together mochiko, sugar, baking powder and pudding with a whisk. Gradually whisk in milk to beat out lumps. One at a time, stir in melted butter, beaten eggs, lemon extract and coconut. Pour into baking pan. Bake 1 hour or until inserted toothpick comes out clean. Makes 24 squares.
