2 LBS OF GROUND BEEF (NOT TOO LEAN)
1 SLEEVE OF SALTINE CRACKERS, CRUSHED
2 EGGS
1 TBSP CHILI POWDER
1/2 TBSP PAPRIKA
1/2 TSP GROUND CAYENNE PEPPER
2 TBSP DRIED ONION
1/2 TBSP ONION POWDER
1 TSP EACH SALT AND BLACK PEPPER
1/2 TBSP SEASON SALT
2 TBSP CANNED CHIPOTLE CHILES IN ADOBO FOR MEAT PLUS TWO FOR SAUCE, CHOPPED
1/2 CUP KETCHUP
1/3 CUP BBQ SAUCE
1 CAN EL PATO TOMATO SAUCE

COMBINE MEAT, CRUSHED CRACKERS, EGGS AND SPICES. ADD 2 TBSP OF CHIPOTLE, 1 TBSP EACH OF KETCHUP, BBQ SAUCE AND EL PATO. KNEAD WITH YOUR HANDS UNTIL MIXED. DON'T OVER MIX OR MEATLOAF WILL BE TOO DENSE. PLACE INTO LOAF PAN. BAKE AT 400 FOR APPROX 45 MINUTES, DRAINING GREASE AS NECESSARY. IN THE MEANTIME, MIX REMAINDER OF KETCHUP, BBQ SAUCE, EL PATO AND CHIPOTLE. REMOVE FROM OVEN, DRAIN GREASE. SPREAD SAUCE MIXTURE OVER TOP OF MEATLOAF AND RETURN TO OVEN FOR ANOTHER 15 TO 25 MINUTES UNTIL SAUCE HAS CARMELIZED A BIT. REMOVE FROM OVEN AND LET REST FOR 15 MINUTES BEFORE SERVING.
