1 BONELESS LAMB ROAST, ABOUT 2 1/2 TO 3 LBS
1/3 CUP EACH RED AND BALSAMIC VINEGARS
1/2 CUP OLIVE OIL, EXTRA VIRGIN
1 TBSP EACH KOSHER SALT AND BLACK PEPPER
1/2 TBSP ONION POWDER
4-5 CLOVES OF GARLIC, MINCED OR CRUSHED
1 TBSP EACH CINNAMON AND ALLSPICE
1 RED ONION CHOPPED INTO 1 1/2 INCH PIECES

CHOP LAMB INTO 2 INCH CUBES.
MIX ALL INGREDIENTS IN LARGE ZIPLOC OR TUPPERWARE.
MARINATE FOR AT LEAST 24 HOURS, UP TO 72.
THREAD ONTO SKEWER, ALTERNATING MEAT AND ONION, ADDING PEPPERS AND MUSHROOMS IF YOU LIKE.
GRILL UNTIL THE CENTER IS JUST PINK, ABOUT 15 TO 20 MINUTES.
REMOVE FROM GRILL AND LET REST FOR 5 MINUTES BEFORE SERVING.
