1/2 c chopped onions
1/3 c celery
2 c cooked ham, chopped
4 - 5 c sweet potato, chopped into 1/2 " cubes
2 1/2 c chicken broth
2 c water
1 1/2 tsp salt (I would wait on salt as broth and ham can both be salty)
1/2 tsp black pepper
1/4 c arrowroot
2 c almond milk, of milk of choice
1/4 c butter or ghee

Directions:
Combine onions, celery, ham sweet potatoes, chicken stock, water, salt and pepper in a large pot. Bring to a boil and then turning down heat to low for a low simmer. Cook until the sweet potatoes are tender. While this is cooking, whist together arrowroot flour and 1/2 c of the almond milk in a medium saucepan until smooth.Add the rest of the almond milk and ghee and bring to a boil. Boil for 1 min or until it thickens. Add the thickened milk mixture to the soup and stir until well incorporated.
