Sweet Potato Mix:
3 c. fresh mashed sweet potatoes (about 4)
1 c. white granulated sugar
1/2 tsp salt
1tsp vanilla extract
2 eggs well beaten
1 stick butter

Crust Mix:
1 c. brown sugar
1/3 c. flour
1 c. chopped pecans
½ stick butter, melted.

Directions:
Directions:
Wash sweet potatoes and bring to boil in large stockpot. While sweet potatoes cook, combine crust mix in bowl and set aside.

After 15 minutes remove sweet potatoes and run under cold water. Cut in half and peel skins. Cut into large chunks and put back into water. Boil 15 minutes until fully cooked.

Remove and mash. Combine sweet potato mix in order listed, mixing thoroughly. Pour mix into buttered baking dish. Sprinkle surface of sweet potato mix evenly with crust mix. Bake 30 minutes at 350 degrees. Let set 30 minutes before serving.
