2 medium potatoes, diced
1 medium carrot, sliced
1 stalk celery, sliced
¼ c chopped onion
1 ½ tsp salt
Dash of pepper
2 c water or chicken broth
¼ c flour
2 c milk
8 oz. grated cheddar cheese

Directions:
Directions:
In a 4-quart saucepan over high heat, heat the first 7 ingredients to boiling. Reduce heat to low; cover and simmer 15 minutes or until potatoes are tender. Do not drain. In a cup, stir flour and ½ c milk until smooth.

Pour flour mixture slowly into soup, stirring until thickened. Add remaining milk and then cheese, stirring until cheese melts. Do not boil.
