2 SMALL CANS TOMATO SAUCE
CHILES OF CHOICE, ANY BLEND (GRANDMA LIKED YELLOW CHILES) 5-10 DEPENDING ON TYPE AND HEAT OF CHILE. BOIL MORE THAN YOU THINK YOU NEED.
1/4 MEDIUM ONION
LARGE HANDFUL OF CILANTRO, STEMS AND ALL
2 GREEN ONIONS
4-5 CLOVES OF GARLIC, PEELED
SALT AND PEPPER TO TASTE
VINEGAR TO TASTE, YOUR FAVORITE KIND (NOT BALSAMIC) ABOUT 1/3 CUP
OLIVE OIL, ABOUT 1/4-1/3 CUP

REMOVE STEMS FROM CHILES AND BOIL UNTIL SOFT
IN BLENDER, ADD TOMATO SAUCE, ONION, CILANTRO, GREEN ONION, GARLIC, ABOUT 1/2 TBSP EACH OF SALT AND PEPPER, 1/3 CUP VINEGAR AND 1/4 CUP OLIVE OIL. ADD 1/2 OF YOUR CHILE PEPPERS AND PUREE. TASTE SAUCE AND ADJUST TO TASTE ADDING MORE CHILES FOR HEAT, SALT, VINEGAR AND OLIVE OIL. IF YOUR SAUCE ISN'T SPICY ENOUGH AND YOU'VE USED ALL OF YOUR BOILED CHILES, ADD RAW CHILES AND BLEND, ONE AT A TIME UNTIL YOU HAVE THE HEAT YOU DESIRE.
