1 head of cauliflower
1 1/2 lbs. Brussels sprouts
Olive oil
Salt & pepper

1. Preheat oven to 375ºF. Cut out the core of the cauliflower and then cut the cauliflower into large, bite size florets. Pile florets on sheet pan and drizzle with olive oil, salt and pepper. Toss to coat. Roast for 15 minutes or until lightly brown.
2. While the cauliflower roasts, cut Brussels Sprouts into 1/8" thick rounds. Heat grape seed oil on medium-high until hot. Add Brussels sprouts, salt and pepper. Sauté until lightly brown, about 6-8 minutes. Add cauliflower and brown until tender, approximately 3-4 minutes.
