1 T olive oil
1 medium onion, chopped
1 stalk celery, chopped
1 carrot, chopped
1 c diced ham (optional)
2 large cloves garlic, minced
4 15-oz cans black beans, drained and rinsed
4 c chicken stock
1 c canned or frozen corn
2 T chili powder
1 T ground cumin
Salt and pepper to taste

Directions:

Heat oil in a large pot over medium-high heat. Saute onion, celery, carrot and ham in the olive oil for 5 minutes. Add garlic, chili powder, and cumin; cook for 1 more minute.

Stir in chicken stock, 2 cans of beans, and corn. Bring to a boil.

Meanwhile, in a food processor or blender, process remaining two cans of beans, along with about ¼ cup of the pot liquid, until smooth. Stir into boiling soup mixture, reduce heat and simmer for 15 minutes.
