Ingredients:  
1 lb. bag of corkscrew, ziti or cavatilli pasta
1 lb. can of whole tomatoes (chopped, keeping juice)
½ c. balsamic vinegar
¾ c. (more or less) olive oil
2 cloves garlic (minced)
½ c. black and/or green pitted olives, roughly chopped
About 1/3 lb. mozzarella cheese cut into dime sized cubes
½ c. fresh basil leaves chiffinoned
1 can artichoke heart quarters (optional)
1 lb. good chicken sausage cooked and chopped into chunks

Directions:

1. Boil pasta in well salted water, drain.
2. In a large bowl tossed together tomatoes, vinegar, olive oil, garlic, olives and optional items if desired.
3. As soon as pasta is drained return it to the warm pot, add the tomato mixture and stir well.
4. Add in cheese chunks and basil and serve immediately.
