Crust components
3 c. flour
3 sticks of butter
4 tbsp cold water

Filling components
3 small packages of lemon pudding
1 large can crushed pineapple (save the juice seperately)
2 eggs

Whipped topping of your choice

Directions:
Directions:
1. Preheat oven to 350 F.
2. Mix together crust components and then press the mixture into a large cookie sheet, even into the orders and up the sides.
3. Bake for approximately 30 min but do not let it get too brown. Let cool.
4. Boil pudding ingredients as described on pudding box except use 3 whole eggs instead of 2 egg yolks per package. Also replace some of the water with the pineapple juice.
5. When the pudding comes to a boil, stir in the drained pineapple. Let cool.
6. Pour on top of the crust.
7. Ensure pudding is completely cool before covering with the whipped topping.
