Pre-made pie pastry shell
Pie plate

Pie filling components
1 1/2 c. boiling water
1 1/4 c. sugar
5 tbsp cornstarch
1/4 tsp salt
Juice from 2 lemons and grated rind
2 egg yolks

Meringue components
2 tbsp sugar
2 eggs whites

Directions:
Directions:
1. Bake pie crust per package instructions. Then set oven to 400 F.
2. Boil water and sugar until sugar dissolves and then pour over cornstarch moistened with a little water. Return to the stove for 3 min.
3. Add egg yolks, salt, lemon rind and juice to the pot then let it cool.
4. Beat the egg whites into stiff peaks then gradually add sugar into meringue.
5. Pour cooled filling into a baked pie shell and cover with meringue.
6. Bake pie in oven until golden brown.
