Salad:
1 small cauliflower (2-3 cups) broken-up
1 cup carrots in ¼" diagonal slices
½ lb. green beans in 2" pieces (2 cups)
1 cup cherry tomatoes
broccoli cut in small florets
fresh mushrooms (sliced if large) - mushrooms don't keep well and decrease 'fridge life
red & green peppers
snow peas
celery
anything else

¼ cup white or tarragon vinegar (add 1 tsp tarragon if using white vinegar)
¼ cup minced onion
1 clove garlic, crushed
½ tsp mixed herbs/tarragon
1 pinch dry mustard
1 tsp salt
pepper to taste
¾ cup vegetable oil

Directions:
Directions:
Drop veggies into boiling salted water and cook separately until tender-crisp, then into cool water to stop cooking. Can also be done in microwave.
Keeps several days in refrigerator. Can make 1-2 days ahead. Add mushrooms shortly before serving.

Dressing:
Combine ingredients well. Thoroughly coat vegetables.
