8 skinless, boneless chicken breast halves
2 medium onions (chopped)
2 garlic cloves (minced)
1 Tbsp vegetable oil
2 (14 ½ oz) cans chicken broth
4 (15 oz) cans cannelli beans rinsed and drained (Great Northern beans can be substituted)
1 (15 oz) can cannelli beans drained and mashed
2 (4 ½ oz) cans chopped green chilies
1 tsp salt
¾ tsp dried oregano
1 tsp ground cumin
½ tsp chili powder
½ tsp ground black pepper
1/8 tsp ground cloves
1/8 tsp ground red pepper
Toppings: sour cream, chopped fresh cilantro

Cut chicken into bite-sized pieces. Saute chicken, onions and garlic in hot oil in a Dutch oven over medium-high heat for 10 minutes or until chicken is done. Stir in broth and the next 10 ingredients; bring to a boil. Cover, reduce heat and simmer for 30 minutes. Can be served with rice. Yields 10 cups.
