1/4 cup butter
1 stalk celery, chopped
1 onion, chopped
1 carrot, chopped
1 clove garlic, minced
1 tsp dried oregano
Salt and Pepper, to taste
3.5 cups whole kernel corn
1 cup chicken broth
2 chicken breasts, cooked and cubed
2 tsp chopped green chili peppers
2 cups milk

Directions:
Directions:
In a large saucepan over medium heat, melt butter. Cook celery, onion and carrot in butter until onions begin to soften. Stir in garlic, oregano, chicken and chili peppers, let simmer for a few minutes. Stir in milk and heat gently just before serving.

Garnish with any of the following: chopped tomatoes, shredded jack cheese, cubed avocado parsley, tortilla chips, salsa, cheddar cheese, sour cream - the choice is up to you.
