2 lbs ground beef
2 drives poblana peppers
1 tsp salt
1 (16 oz) jar of salsa
1\2 tsp dried oregano
1 tsp ground dried Chipotle pepper
2 (8.5 oz) Jiffy corn muffin mix©
2 eggs
2\3 c milk
4 oz. shredded cheddar cheese
4 oz. shredded Monterey Jack cheese
1 can whole kernel corn

Preheat oven to 350º. Spray a 9 x13 baking dish with cooking spray. Cook ground beefover medium high until meat browns and releases, about 5 minutes, stirring to break up. Reduce heat to medium and add poblano peppers, salt, salsa, and Chipotle pepper. Cook about 10 minutes until meat is no longer pink. Drain. Mix one package of corn muffin mix in a bowl with 1 egg and 1\3 c. Milk. Mix the 2nd package of muffin mix with 1 egg and 1\3 c milk and 1\2 of the cheddar cheese and Monterey Jack cheese. Place the first box of muff mix in bottom of pan. Sprinkle with corn and remaining cheese. Top with beef mixture. Spoon the 2nd corn muffin mix over beef mixture and carefully spread with a fork. Bake 50+60 minutes.
