1 1/2 Flour-sifted
1/2 tsp Salt
8 x-lg Eggs- separated
11 3/4 C Sugar
1/2 C plus 2 Tbsp Water
Finely grated Zest of 1 lg. Lemon
1 Tbsp Lemon Juice
1 tsp Lemon Extract
1/2 tsp Cream of Tartar

Directions:
Beat egg yolks on med. speed for 1 min.
Increase beater speed to high . Beat for 5-6 min.until yolks are pale . Set aside
Heat 1 1/2 C sugar and 1/2 C water in saucepan over high heat
Swirl occasionally as it comes to boil
When mixture turns clear, cover and boil 2-3 min longer
Uncover and cook without stirring until temperature reaches 230 degrees
Beat egg yolks again ( on high) briefly
Add in small amounts the sugar/water syrup beating to combine ingredients
When all syrup has been added, beat for another 2-3 min. until cooled
Beat in lemon zest, juice extract and 2 Tbsp water
Add flour mixture and beat on low until mixed
Separately beat egg whites until foamy, add cream of tartar.Beat until forms soft peaks
Beat in 1/4 C Sugar slowly until forms stiff peaks
Fold egg whites into yolk mixture until a uniform yellow mixture
Transfer to a 10 inch tube pan-ungreased
Place pan in cold oven. Turn temperature to 350
Bake 50-55 min. until golden brown. ( Begin checking at 40 min.)
Immediately invert and allow to cool, upside down, for about 2 hours
Use a knife to loosen cake
