This dish can be prepared one day ahead – serves lots!

1 pkg fettuccini noodles, broken into thirds
Cherry tomatoes (24 or so), cut in half
1 can black olives, sliced
Broccoli
Sliced mushrooms (8 oz or so)
¾ head cauliflower

Pesto
1 c dried basil
1 tsp salt
½ tsp ground pepper
½ c parmesan cheese
3 cloves garlic, minced
1 ½ - 2 c olive oil
2 T ground walnuts

Directions:
Directions:
Blend basil, salt and pepper, olive oil and garlic in blender or food processor. Add nuts and Parmesan cheese. Add ½ c more oil if mixture is too thick. Let stand at room temperature for at least one hour.
