1 c uncooked wild rice – rinsed and drained
1 ½ c chopped tomatoes
1 c chopped yellow, green or red sweet peppers
1 c chopped green onions
2/3 c chopped pecans, toasted
½ c snipped fresh mint
2/3 c golden raisins or dried cherry craisins
1/3 c olive oil
1/3 c lemon juice
½ tsp salt
½ tsp black pepper

Directions:
Directions:
Cook wild rice according to package, drain and cool.

In a large bowl combine cooled rice, tomatoes, sweet peppers, green onions, craisins, pecans and mint.

In a small bowl, combine dressing ingredients with a whisk. Pour over wild rice mixture. Toss to coat. Cover and chill for 2 to 8 hours.
