12 oz pkg bacon, cut in small pieces
1 cup carrots, sliced
6 medium potatoes, diced
1 can whole kernel corn
1/2 block Velveeta, cubed
1/2 tsp. salt
1/2 tsp. pepper
1 T. minced onion
1- 2 tsp. garlic salt, to taste

Directions:
Directions:
Fry up the bacon and drain most of the grease. (leave a little for flavor)
Add carrots and cover with water. Cook until they start to soften, about 10 minutes. Add the diced potatoes and just enough water to cover. Add in seasonings and stir. Bring to a slight boil, reduce heat and simmer about 20 minutes, until potatoes are cooked through. Stir in corn and cheese. Serve once cheese has melted. Top with shredded cheddar and/or croutons to garnish.
