1/3 C Celery-finely chopped
1/3 C Green Pepper-finely chopped
1/3 C Onion- finely chopped
1/3 C Carrots- finely chopped
4 Tbsp Butter
1 can ( 15 oz ) Tomatoes or 4 Tomatoes-chopped
1 tsp Sugar
1 tsp Salt
1 Bay Leaf
Dash Pepper

Directions:
Directions:
Cook celery,green pepper, onion, carrots in butter until tender.
Add Tomatoes and seasoning
Simmer until thickens---about 15 min.
Use on Shrimp. fish or omelets
Makes about 2 1/4 C


Bake fish at 350 for 45 min
