6 lb. sweet potatoes
1 stick of butter
flour
dark brown sugar

Directions:
Boil sweet potatoes until you can stick a fork in them and they are almost soft.
Pour off water.
Rinse the potatoes one at a time, and peel off skin while still hot. The skins will come right off. Peel off any extra skin or marks. Slice into quarters.

Make a rue. Melt 1 stick of butter until very hot. Add about the same amount of flour to hot butter. Stir until smooth. Add a few cups of brown sugar.
Stir until mixed. Add water if it becomes too thick.
Add sweet potatoes.
If there is not enough syrup to cover sweet potatoes, make more syrup as explained above.
