1 lb. green beans, stem ends snapped off
4 tbsp. unsalted butter
4 large shallots, sliced thin (about 2 cups)
Salt and pepper
2 tbsp. dry vermouth

Directions:
Directions:
Bring 2 1/2 quarts of water to a boil in a large sauce pan. Add salt and green beans. Return to the boil and cook until the beans are bright green and crisp-tender, 3 to 4 minutes. Drain the beans and transfer immediately to ice water. Once they are cool, drain and dry thoroughly with paper towels.

Heat 2 tbsp. of better in a small skillet over medium heat until foaming. Add shallots and cook, stirring frequently until golden brown, fragrant, and just crisp around the edges (about 10 minutes.) Set aside.

Heat 1/4 c water and beans in a skillet over high heat, tossing with tongs, until the beans are warmed through.

Meanwhile, return the skillet with shallots to high heat. Stir in the vermouth and bring to a simmer. Whisk in the remaining 2 tbsp. of butter, 1 tbsp. at a time. Season with salt and pepper.

Top the beans with shallots and sauce. Serve immediately
